Cabbage Wraps with Peanut Ginger Sauce

- For Crispy Tofu
2 blocks tofu
6 T Cornmeal
1 T curry powder
1 tsp. turmeric
- Fillings
1 head purple cabbage
5 carrots
1 red pepper
1 yellow pepper
- Creamy Peanut Sauce
1 C dry roasted no salt peanuts
1 C water (add slowly, as needed.)
2 pitted dates chopped
1.4 T Coconut Aminos
2 coins ginger
Directions
- Preheat to 400.
- Prepare Tofu
- Cube 2 blocks tofu.
- Coat with cornmeal, curry powder, turmeric in bowl.
- Bake on sheet pan at 400 for 25-30 min.
- Prepare Ingredients
- Shred cabbage.
- Grate carrot and blot.
- Chop red & yellow peppers.
- Make Wraps
- Spread peanut sauce over wrap.
- Add cabbage and everything else.
- Tuck sides in, roll, and cut.
