Cabbage Wraps with Peanut Ginger Sauce

Ingredients

  • For Crispy Tofu
  • 2 blocks tofu

  • 6 T Cornmeal

  • 1 T curry powder

  • 1 tsp. turmeric

  • Fillings
  • 1 head purple cabbage

  • 5 carrots

  • 1 red pepper

  • 1 yellow pepper

  • Creamy Peanut Sauce
  • 1 C dry roasted no salt peanuts

  • 1 C water (add slowly, as needed.)

  • 2 pitted dates chopped

  • 1.4 T Coconut Aminos

  • 2 coins ginger

Directions

  • Preheat to 400.
  • Prepare Tofu
  • Cube 2 blocks tofu.
  • Coat with cornmeal, curry powder, turmeric in bowl.
  • Bake on sheet pan at 400 for 25-30 min.
  • Prepare Ingredients
  • Shred cabbage.
  • Grate carrot and blot.
  • Chop red & yellow peppers.
  • Make Wraps
  • Spread peanut sauce over wrap.
  • Add cabbage and everything else.
  • Tuck sides in, roll, and cut.
