There are lots of recipes like this out there and for my version, I liked the idea of using whole ingredients as much as possible so I went with a cashew base, jalapeño, garlic, nutritional yeast, and — thanks to my sister in law who introduced me to the secret ingredient — Trader Joe’s Salsa Verde.

Vegan Spicy Queso

1 Cup Cashews
1/2 12 oz. Jar Trader Joe’s Salsa Verde*
2 T Nutritional Yeast
3 cloves garlic
1/2 jalapeño, seeds removed
Optional: A pinch of cayenne.
Directions
- Blend in a high powered blender.
- Note: While blending, if it is too dry, add more salsa instead of water.
